7 Make-Ahead Easter Brunch Ideas

Easter is just around the corner.  Have you planned your menu yet?  Here are a couple of great Easter brunch ideas to inspire your menu.  We love eggs and bacon at our house, and with the eggs on sale around town, it’s an economical item to include on your brunch menu.  I like to have my brunch mostly prepared before leaving for church on Easter Sunday, that way I just have to heat a few dishes when we get home, rather than prepare everything from scratch that morning.

This breakfast casserole is always a huge hit at my house and I make it the night before and bake it off in the morning when we get home from church.

These ham and cheese scones are amazing.  While I typically prefer a sweet scone, I recently tried this savory scone recipe and it was out of this world.  It’s the perfect recipe to take advantage of the $.88 Challenge Butter deal at Safeway through March 29th.

How amazing do these Blueberry Cheese danishes look?  At 20 minutes to prepare – that is my kind of recipe!  It looks so gourmet, yet its simple and easy to prepare.

This baked blueberry lemon french toast can also be done the night before and just baked in the morning.  It is so fresh and delicious with the tartness of the blueberries and lemon zest.  A winner every time.

Another gorgeous make ahead dish is this monte-cristo waffle strata.  Layer waffles with ham, turkey and swiss cheese and coat with eggs, milk and butter and  you have this amazing flavor combination.   While you likely won’t have the cranberry topping that she has, you can top with any fresh raspberry jam or even with fresh raspberries.

My kids and husband LOVE deviled eggs.  I recently stumbled upon this recipe for bacon deviled eggs that is out of this world.  Seriously – it has bacon, so how you go wrong?  Be sure to take advantage of the $.89 Market Pantry Eggs and lots of bacon deals for this recipe.  These can also be prepared ahead and just pull them out of the refrigerator as an appetizer while the main dish is baking.  Sprinkle with bacon and chives right before serving.
